Roasted Butternut Squash Soup  

Ingredients:

1. 1 medium-sized butternut squash 2. 1 onion, finely chopped 3. 2 carrots, peeled and diced 4. 2 cloves of garlic, minced 5. 4 cups vegetable broth 

6. 2 tablespoons olive oil 7. 1 teaspoon ground cumin 8. 1/2 teaspoon cinnamon 9. Salt and pepper to taste 10. 1/2 cup heavy cream (optional) 11. Fresh parsley for garnish
